Sardinian Pecorino
Sardinian pecorino is a Protected Designation of Origin (PDO) sheep's milk cheese, produced in Sardinia.
It is made from whole sheep's milk from Sardinian farms, possibly thermised or pasteurised, rennet, salt and milk enzymes.
It is sold in two versions: a mild, fresher, about 1-2 months, and a mature, more seasoned, not less than 2 months.
Pecorino is one of Sardinia's oldest cheeses.
The first precise historical information on the ancient origins of Pecorino Sardo DOP dates back to the end of the 18th century, with the Discorso georgico indicante i considerevoli vantaggi che si possono ricavare dalle pecore sarde, a volume dated 1787 and written by Cavaliere Don Giuseppe Cossu.
