Sa Coccoi Prena, a typical Ogliastra recipe
Sa coccoi prena, or stuffed bread, is nothing more than leavened dough stuffed with potatoes and pecorino cheese and fresh mint.
The base of the coccoi prena is made with a durum wheat flour dough and its interior is reminiscent of the famous culurgiones (typical Sardinian ravioli).
The cheese used for this recipe is Sardinian pecorino, the most suitable is a fresh acidulous cheese, this can be found under different names depending on the area, but can be replaced by a semi-mature cheese.
As for the yeast, either a sourdough starter or a brewer's yeast is used, while for the flour, the main ingredient is durum wheat, to which a percentage of soft wheat can be added or durum wheat can be used entirely.
