Pistoccu, the typical bread of Ogliastra


Pistoccu was made in every household, as it was the bread of transhumance.

When the shepherds went on transhumance with their flocks, that is, they moved them from the plains to the mountains in summer and then from the mountains to the plains in winter, they had to take a food that would last for a long time, as they could be away from home for up to 15 days.

This food is Pistoccu. 

The components of Pistoccu vary from lowland to mountain.

In the plains, Pistoccu consists of flour, salt and yeast; while in the mountains, potatoes are also added.
