Pardule, traditional Sardinian sweets

Pardule, typical Sardinian sweets

Pardulas, as they are called in the Sardinian language in the areas of Sulcis, the Campidano of Cagliari and Oristano, and Ogliastra, or Casadinas, a variant of Barbagia and Logudoro, are a typical Easter sweet in the Sardinian tradition.

Pàrdula and Casadina are small cakes with a ricotta or cheese filling.

Depending on the area, they can have two versions: one savoury and one sweet; with orange or lemon flavouring, or with sultanas.

Despite the same preparation steps, the taste of Pàrdula (filled with ricotta, with a delicate flavour) compared to Casadina (filled with fresh cheese, with a stronger flavour) is very different.
