Pane frattau, the king's first dish
Su Pani Frattau, a poor man's dish symbolising Sardinia
According to Sardinian legend, Pane Frattau was invented by Sardinian housewives on the occasion of King Umberto I's arrival in Sardinia.
Pane frattau consists of a base of pane carasau softened in broth and seasoned with tomato, pecorino cheese and a poached egg.
But how is it eaten?
Although there is no rule for eating it, there is a way to best savour the flavour.
First, you break the egg in the centre. Then, one divides the carrasau bread into two or four parts and wraps them around themselves. This way, the seasoning will stay warm.
