Casu Ageru, the refreshing cheese

Casu Ageru, the typical Sardinian agro-pastoral cheeseSu Casu Ageru, or Casu Axedu or even Casu Agedu, is a fresh cheese made from sheep's or goat's milk, in the form of small rectangles dipped in whey, coagulated cut, or with coagulum taking the shape of the container, coagulated whole.Casu Ageru is porcelain white in colour, and has a pleasantly acidulous flavour.This cheese is included in the traditional foods of Sardinia.To obtain Su Casu Ageru the milk must be treated thermally: first of all the milk must be pasteurised, after which the milk must be cooled to add the whey.After the whey, the rennet, which can be liquid or powdered, of adult cattle, calf or kid, must be added to coagulate the milk.
